( Wrapped Lamb Liver )

Ingredients :

- 500gr. Lamb liver
- ½ glass of rice
- 50gr pine nut
- 50 gr currant
- 2 glass of water
- 3 medium sized onion
- 4 tablespoon vegetable oil
- A Half bunch of dill and parsley
- 2 lamb shirt
- Enough salt
- 1 dessert spoon thyme
- 1 dessert spoon Nigella
- 1 dessert spoon Black pepper
- 1 dessert spoon Paprika
- 1 dessert spoon sugar

For The Top

- 1 table spoon yoghurt
- 1 table spoon tomato paste
- 2 eggs

Method :

1. Put the lamb shirt into the warm water for a while
2. Roast the chopped liver ( They should be tiny pieces like dices) with the half of the oil. And put them aside.
3. With the rest of the oil, roast the tiny chopped onions with adding rice, pine nut, nigella, thyme, dill, parsley, sugar, black pepper, paprika in order.
4. Add a glass of water to cook well then mix it with the roasted liver.
5. Then let them rest for 10 minute
6. Cut the lamb shirt into desirable size and place them into a cup and put the mixture inside and wrap it then put it into the tray upside down.
7. Mix the 1 table spoon tomato paste,yoghurt and 2 eggs and overlay the top with this mixture.
8. Pour one glass of water into the tray and cook 20 minute in medium heat
9. Serve warm.
