( Stuffed Vine Leaves )

Ingredients :
(For 4 poeple)
- 1/2 kilo vine leaves (fresh or in brine)
- 1 glass olive oil
- 4 medium sized onions
- 3 soupspoons pine nuts
- 3 soupspoons currants
- 1 teaspoon black pepper
- 1 teaspoon hot red pepper
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 soupspoons dried mint
- 2 soupspoons tomato puree
- A bunch of parsley and dill
- 2 glasses water
- 1 lemon
- 2 medium tomatoes
- Salt
Method :
Simmer the leaves until
soft,drain. Chop the onions finely and fry them in half a
glass of olive oil. Add the rice and fry for 2 minutes.
Chop the parsley and dill finely. Add all the ingredients to
the onion and rice mixture and stir. Add a glass of water
and simmer untill cooked. When cool place a small amount of
the rice mixture onto the vine leaves and wrap into parcels,using
all the leaves. Place the stuffed vine leaves into a pan,pour
over a glass of water and cook over a very low heat untill all
the water is absorbed. When cool,serve granished with sliced
lemon and parsley.
