( Stuffed Aubergine )

Ingredients :
(For 4 poeple)

- 4 aubergines, 1/2 kilo
- 250 g. miced beef
- 2 medium sized onions
- 3 medium sized tomatoes
- 6-7 green peppers
- A bunch of parsley
- A glass of oil
- Salt and pepper
Method :

Peel the aubergines in stripes and leave to soak in salted water for 30 minutes. Chop the onions finely and fry in oil,then add the finely chopped peppers and minced beef and continue frying. Grate one tomato and add to the pan with the chopped parsley;continue frying for about 30 minutes.Add salt and pepper,remove from the heat and leave to cool. Fry the aubergines in oil and place onto a shallow dish. Slit open the aubergines lenghtways using a sharp knife and stuff with beef mixture. Decorate with tomato and green peppers. Grate the remaining tomato and place around the aubergines. Cook in the oven for 30 minutes at 200 and serve hot.
