Ingredients :

- 1/2 kilo aubergines
- 1/2 kilo onions
- 1/2 kilo tomatoes
- 200 gr. green peppers
- A bunch of parsley
- A head of garlic
- One teaspoon sugar
- One tablespoon vinegar
- A glass of oil
- Salt and pepper
Method :

Peel the aubergines, dice and leave in salted water for one hour.Drain and fry in the oil.Finely dice the onions and green peppers and fry in oil until pink.Peel and dice the tomatoes and chop the parsley and garlic finely.Mix together all the ingredients and season with salt,pepper,sugar and vinegar,then simmer gently for 30 minutes. Serve cold.
